COLD GLAZE USING WONDERGEL - 50

Procedure

Ingredients
1cup of Liquid Glucose syrup
2 teaspoons of WONDERGEL- 50
One cup of Sugar
2 cup of water
1/ 4th tsp Citric Acid
Step 1
In pan mix Wondergel 50 and water and bring to boil till Wondergel dissolves completely. At the same time take another pan, add liquid glucose syrup and sugar and mix well till it melts completely to form a uniform mix.
Step 2
Then pour Wondergel 50 solution into the glucose syrup mix and stir well to combine. Heat the mixture until it boil. Remove whole solution from heat, add citric acid and if required add the colors and flavors. Once the glaze has cooled, apply to the pre-chilled cake.
